Halwa in Arabic means “sweet” and it is made from carrots so it is called as gajar ka halwa. It is one of the traditional sweets made with no short cuts. While preparing gajar ka halwa one must continuously keep on stirring it so as to avoid its burning. Also reducing milk takes ample of time.

To make the recipe more easy and simple, condensed milk or khoya can be used in place of milk. But the taste of halwa made with condensed milk or khoya is different from the one made with milk.

Juicy, red and tender carrots make tasty and delicious halwa. Juicy carrots are also easy to grate. Gajar ka halwa can be stored in fridge for almost a week as it has good shelf life. It can be served cold or you can just warm the halwa and then serve.

Ingredients
  • Carrots - 1 kg
  • Milk (Full cream) - 1 litre
  • Malai / cream - ½ cup (optional)
  • Ghee (clarified butter) - 1 tbsp
  • Sugar - 2 cups/ ½ kg or to taste
  • cardamon powder - ½ tsp
  • Chopped dry fruits - 1 tbsp
Instructions
  1. Wash the carrots, peel their outer skin and cut it’s thinner edge. Peel carrots and wash again.
  2. Grate them using a hand-held grater or you can also use food processor.
  3. In a heavy kadhai, add the grated carrots.
  4. On low to medium flame, stir grated carrots for 4 to 5 minutes so as to evaporate some of its moisture content.
  5. To the carrots, pour full cream milk. Also add malai / cream to give it a rich and creamy taste. Stir well.
  6. Bring it to boil. After one boil lower the flame. Keep on stirring the mixture occasionally in order to avoid burning of milk and carrots.
  7. You will now be able to see fine milk solids made by reducing the milk with the carrots.
  8. When milk reduces and the mixture turn to thick consistency, add ghee (clarified butter) to the kadhai and mix well.
  9. Simmer for more 5 minutes. Add sugar and ½ tsp cardamon powder. Mix well.
  10. After adding sugar, carrots again become moist. Do keep on stirring the mixture for uniform cooking plus to avoid sticking of carrots to the bottom of kadhai.
  11. Keep on simmer till it’s moisture evaporates.
  12. When the halwa looks dry, add chopped dry fruits.
  13. Mix well.
  14. Garnish with chopped nuts and serve hot.
