Baingan ka Bharta Recipe - How to make baigan bhurta

Ingredients
  • Cooking Oil - 1 tbsp
  • Brinjal / eggplant - 1 large
  • Onion - 3 large
  • Tomato - 2 large
  • Cumin seeds - 1 tsp
  • Red chili powder - ½ tsp
  • Turmeric powder - a pinch
  • Coriander powder - 1 tsp
  • Fresh coriander leaves - 1 tbsp, chopped
  • Salt to taste
Instructions
  1. Grease brinjal with oil and place it on gas stove. Lower the flame.
  2. Keep on turning till it become soft and mushy.
  3. Insert a knife to check whether roasting is done or not. The skin of eggplant will get charred.
  4. With light hands scratch the charred skin of brinjal. Discard the stem.
  5. Roughly mash the roasted brinjal flesh and keep aside.
  6. Chop onions and tomatoes.
  7. In a pan heat oil and add cumin seeds.
  8. When cumin seeds splutter, add chopped onions and fry till onions become soft and translucent.
  9. Add tomatoes. Cook till it starts leaving oil.
  10. Add red chili powder, a pinch of turmeric powder and coriander powder. Cook for 2 to 3 minutes.
  11. Add mashes brinjal and salt to taste. Mix.
  12. Cook for 5 -6 minutes. Remove from the gas.
  13. Garnish with coriander leaves and serve hot with roti and your favorite daal.
