- Cooking Oil - 1 tbsp
- Brinjal / eggplant - 1 large
- Onion - 3 large
- Tomato - 2 large
- Cumin seeds - 1 tsp
- Red chili powder - ½ tsp
- Turmeric powder - a pinch
- Coriander powder - 1 tsp
- Fresh coriander leaves - 1 tbsp, chopped
- Salt to taste
- Grease brinjal with oil and place it on gas stove. Lower the flame.
- Keep on turning till it become soft and mushy.
- Insert a knife to check whether roasting is done or not. The skin of eggplant will get charred.
- With light hands scratch the charred skin of brinjal. Discard the stem.
- Roughly mash the roasted brinjal flesh and keep aside.
- Chop onions and tomatoes.
- In a pan heat oil and add cumin seeds.
- When cumin seeds splutter, add chopped onions and fry till onions become soft and translucent.
- Add tomatoes. Cook till it starts leaving oil.
- Add red chili powder, a pinch of turmeric powder and coriander powder. Cook for 2 to 3 minutes.
- Add mashes brinjal and salt to taste. Mix.
- Cook for 5 -6 minutes. Remove from the gas.
- Garnish with coriander leaves and serve hot with roti and your favorite daal.
