Jaggery Rice Recipe - Gud Wale Chawal
 
Ingredients
  • Jaggery - 1 cup
  • Rice - 1 cup
  • Ghee - 3 tablespoons
  • Cinnamon (cinnamon) - 1 inch piece
  • Green cardamom - 3
  • Cloves - 2 to 3
  • Cashew nuts - 2 tbsp, finely chopped
  • Almonds - 2 tbsp, finely chopped
Instructions
  1. Cut jaggery into small pieces and soak it in 1 cup of water.
  2. Heat the water in a pot, add rice and a tablespoon of ghee to it and bring it to a boil (half boil) on a medium flame.
  3. Sieve the half-boiled rice and take it out in a large plate.
  4. Heat 2 tablespoons ghee in a pan. Fry cinnamon, green cardamom and cloves in hot ghee.
  5. Now add parboiled rice, water and jaggery solution to the pan. Also finely chop the dry fruits and add them to the pan.
  6. ook the jaggery rice on low heat till the rice becomes soft.
  7. When the jaggery rice is cooked, turn off the gas
  8. Garnish jaggery rice with dry fruits and serve hot.
