Here comes one more yummy and delicious pasta recipe. Earlier I shared White sauce pasta Recipe in my blog and this time it is Red Sauce pasta.

It is well known that canned tomato puree is good to make red sauce for pasta but I have used freshly tomatoes so as to avoid preservatives and artificial colors. But if you want you can easily replace fresh tomato paste with ready to use tomato puree available in market.

Ingredients
  • Pasta - 2 cup (any type)
  • Onion - 1, finely chopped
  • Tomatoes - 3, medium
  • Capsicum - 1, cut into square
  • Yellow bell pepper - 1, cut into square
  • Garlic - 2 tsp, finely chopped
  • Sweet corn - ½ cup, boiled
  • Red chili powder - ¼ tsp
  • Black pepper - ½ tsp
  • Tomato ketchup - 2 tbsp
  • Cooking Oil - 1tbsp + 1 tsp (for boiling pasta)
  • Salt - to taste + ½ tsp salt
  • Grated cheese - ½ cup
Instructions
  1. Heat water in a pan and add penne pasta, 1 tsp cooking oil and ½ tsp salt. Boil pasta and keep aside.
  2. Now, blend tomatoes to a smooth paste.
  3. In a pan, heat oil and saute capsicum and yellow bell pepper and remove on tissue paper to drain excess oil.
  4. In the same pan, add 2 tsp oil and saute chopped garlic. Do not turn it brown.
  5. Add chopped onion to the pan. Cook till onion become translucent.
  6. Add prepared tomato paste to the onion. Mix well.
  7. When the raw taste goes away from tomatoes add red chili powder, black pepper and salt to taste. Mix Well.
  8. Add 2 tbsp tomato ketchup. Stir.
  9. Add boiled sweet corn and pan-fried capsicum and yellow bell pepper. Mix.
  10. Add boiled pasta. Mix very well as to coat pasta with the red sauce.
  11. Add grated cheese over the pasta and mix well. Remove from gas.
  12. Red Sauce pasta is ready. Serve hot.
Notes
Do not over boil pasta.
You can use any type of pasta, I have used penne pasta here.
In place of fresh tomato paste, tomato puree can also be used. It is readily available in market.

1. Lets start with boiling pasta. To boil pasta, heat water and add pasta, 1 tsp cooking oil and 1/2 tsp salt. Once pasta is boiled drain out water and pour cold water over boiled pasta to prevent it from further cooking. Keep it aside.boiled pasta for making pasta recipe

 

2. Take tomatoes and blend them to a smooth paste.

3. In a pan, heat oil. Saute capsicum and yellow bell pepper and remove on tissue paper to drain excess oil.

4. In the same pan, add 2 tsp oil and saute chopped garlic. No need to turn it brown.

5. Add onions to the pan. Cook till onion become translucent.

6. Add earlier pureed tomatoes to the onion. Mix well.

7. When the raw taste goes from tomatoes add red chili powder, black pepper and salt to taste. Mix Well.

10. Add boiled pasta. Mix very well as to coat pasta with the red sauce.
